- Rhubarb Coffee Cake

- 1 1/2 cups brown sugar
- 1 cube butter
- 1 egg
- 1 tsp. vanilla
- 2 cups flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 cup buttermilk
- 1 1/2 cup rhubarb, cut into 1/2 inch pieces
- 1/2 cup brown sugar
- 1 tsp. cinnamon

- Cream together butter and sugar. Mix in egg and vanilla. Add flour,
- salt, and soda alternatly with buttermilk. Stir in rhubarb. Top with
- brown sugar and cinnamon.

- Bake at 375 for 30 to 40 minutes in a 2 quart baking dish.
